Umami Brioche
Where the classic French pastry meets the flavours of Japan. What sets this brioche apart is a blend of Shiitake and champignon mushrooms in a cheesy miso bechamel sauce to create an explosion of flavour with every bite.
A sprinkle of furikake elevates the sensory experience with a crunch and truly umami flavour. The result is an irresistible treat that will certainly satisfy your cravings for something savoury.
ARI-GATEAUX sushi cake
Known as 'ARI-GÂTEAUX' (Arigatō, meaning thank you in Japanese and gateaux, French for cake) the concept plays on the mind, as it’s almost impossible to tell it apart from the real deal.
An undeniable replica of sushi, the sweet little package of joy includes two rolls - Pear and Grapefruit – sitting perfectly paired next to a Rockmelon Nigiri with classic sushi condiments. But nothing is what you expect it to be.
Each with a sponge foundation, the Pear Roll starts with a classic French gâteau sponge filled with chestnut cream, sitting on a butterscotch biscuit base, and topped with red wine and Choya poached pears and finger lime ‘caviar’.
A Grapefruit Roll is filled with lemongrass cream, grapefruit jelly, julienned rockmelon, pomegranate jelly, pickled Granny Smith apple, and topped with dragon fruit and finger lime ‘caviar’.
Torched rockmelon sits atop a sponge roll filled with coconut cream, pomegranate jelly and seeds all wrapped up in a crepe ‘nori’ strip.
A pipette of ‘soy sauce' contains dark pomegranate molasses and yuzu sauce, ‘wasabi’ is, in fact, matcha white chocolate, and ‘pickled ginger’ is replaced with pickled slices of apple.
The 'chopsticks' are made with a sweet crisp biscuit, strawberry chocolate and gold powder.
Yakitori Doughnuts
Renowned Izakaya classic with a Black Star twist.
Doughnut balls soaked in yuzu syrup, filled with lemon curd, drizzled with dark yuzu caramel, garnished with white chocolate Cremieux and white, strawberry and caramel chocolate shavings, dehydrated matcha sponge. Yakitori never tasted this sweet.
Matcha Ceremony
A sweet treat that celebrates the Japanese green tea ceremony. It starts with a Kintsugi style handcrafted black cocoa pastry cup, with its golden cracks - a metaphor for embracing imperfections. The teacup is filled with a rich matcha mousse, boasting a sweet and earthy flavour.
Hidden inside, you’ll find a matcha sponge that adds a delightful texture, while the dusting of matcha powder and gold leaf will have you transported to a serene Japanese tea garden.

Lemon Pistachio Cake
Lavish layers of pistachio ganache, white chocolate mousse, lemon curd and crunchy pistachio dacquoise, result in a light texture and flavour profile featuring the tang of lemon and smooth richness of white chocolate. Topped with a handcrafted chocolate origami crane. (GF)
Ume Forest Cake
There’s nothing black about our Ume Forest Cake. Whilst inspired by the European classic, Black Star Pastry’s version has a distinct Japanese flavour profile. Infused with the distinctive flavour of ume, Japanese plum fruit, hojicha sponge (roasted green tea) is layered with Choya confit ume in umeshu infused cream and garnished with dark chocolate leaves and bark, topped with a whole confit ume. Sitting on a matcha moss with a sprinkling of chocolate soil, this cake will take you away to a tranquil Japanese forest.
Zen Cheesecake
Black Star Pastry's most blissful cake. Inspired by a zen Japanese rock garden, a crunchy, thin bed of charcoal milk chocolate feuilletine sits beneath layers of cheesecake that combine for the ultimate flavour combination. A sweet mascarpone and cream cheese with a salty Shiro miso is followed by an intense, candied black sesame cheesecake that is raked like a zen garden and dotted with almond and black sesame macaron 'rocks'. Forget searching for a meditative state, you've found a meditative cake.
