When asked to develop a Japanese inspired cake for Melbourne Food and Wine Festival, we felt it was only fitting to create a mouth-watering sushi selection that showcases Black Star’s shokunin or mastery of making cakes.
Known as 'ARI-GÂTEAUX' (Arigatō, meaning thank you in Japanese and gateaux, French for cake) the concept plays on the mind, as it’s almost impossible to tell it apart from the real deal.
An undeniable replica of sushi, the sweet little package of joy includes two rolls - Pear and Grapefruit – sitting perfectly paired next to a Rockmelon Nigiri with classic sushi condiments. But nothing is what you expect it to be.
Each with a sponge foundation, the Pear Roll starts with a classic French gâteau sponge filled with chestnut cream, sitting on a butterscotch biscuit base, and topped with red wine and Choya poached pears and finger lime ‘caviar’.
A Grapefruit Roll is filled with a lemongrass cream, grapefruit jelly, julienned rockmelon, pomegranate jelly, pickled Granny Smith apple, and topped with dragon fruit and finger lime ‘caviar’.
Torched rockmelon sits atop a sponge roll filled with a coconut cream, pomegranate jelly and seeds all wrapped up in a crepe ‘nori’ strip.
A pipette of ‘soy sauce’ contains a dark pomegranate molasses and yuzu sauce, ‘wasabi’ is in fact matcha white chocolate, and ‘pickled ginger’ is replaced with pickled slices of apple.
The 'ARI-GÂTEAUX' is available from Saturday 18 July - Sunday 19th June.
