Inspired by the calm beauty of a traditional Japanese rock garden, the Zen Cheesecake is a carefully balanced dessert that brings together contrasting flavours, textures, and visual artistry.

A thin layer of crunchy charcoal milk chocolate feuilletine forms the foundation for two distinctive cheesecake layers. The first combines mascarpone, cream cheese, and shiro miso for a delicate balance of sweetness and savoury depth, while the second features rich candied black sesame for a bold, nutty finish.

Finished with a raked black sesame surface and adorned with almond and black sesame macaron ‘rocks’, this striking cake offers a uniquely indulgent experience. Sophisticated, textural, and deeply satisfying, it is designed to be savoured slowly and shared on special occasions.
